Being one of the fattier cuts of pork means that the belly is ideal for slow roasting at a lower temperature, giving flavourful, succulent, melt in the mouth results. It is also great for marinating prior to cooking, and goes well with Asian flavours or perhaps a paste of olive oil, garlic and rosemary.
